Every Christmas, my sister and I would help my grandmother bake her chocolate cake. Now, this was never any ordinary cake from the box. This beautiful piece of sugary confection was made from scratch. As the years passed, we always looked forward to making this cake with her. So, since my grandmother passed away in 2001, I now make this cake for the family at Christmastime.
What always fascinated me was making the icing. She always made it from Hershey’s Cocoa. Now, mind you the recipe for “Perfectly Chocolate Chocolate Frosting is on the side of the container. What set our cake apart from others was that my grandmother spread the icing on the cake while it was hot and then added crushed pecans around the sides and whole pecans on top. It is truly my favorite cake to bake each and every year.
Below is the ingredients and instructions on making the icing.
Ingredients
- 1/2 cup (1 stick) butter or margarine
- 2/3 cup HERSHEY’S Cocoa
- 3 cups powdered sugar
- 1/3 cup milk
- 1 teaspoon vanilla extract
Directions
- 1. Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.
- 2. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.
